- 1 piece of Iberian “presa” (200 g per person)
- Olive oil
- Soya sauce
- 1 orange
- Thyme and rosemary
- 2 cloves of garlic
- Fresh cottage cheese
- Black or white grapes
In a bowl, mix together the olive oil, the soya sauce, the orange skin, garlic and aromatic herbs at the ratio of 3 parts oil to 1 part soya. Macerate the meat in this mixture for 30 minutes.
For the dressing: In a bowl, mix the cottage cheese with the oil, salt and pepper. Put into a pastry bag.
Quick heat the “presa” on all sides at a high heat in the saucepan. Then leave to stand for 5 minutes before giving it a blast of heat and cutting into strips, to taste.
To serve, we place the pastry bag mixture over the plate and on top of this, the peeled half-grapes and some leaves as garnish. Serve with a dash of oil and salt flakes.
